The Medusa Group Announces Carlo Cavallo
as Corporate Executive Chef
LAS VEGAS– June 30, 2010 – Officials from The Medusa Group, the nightlife and hospitality company behind Lolita’s Cantina & Tequila Bar at Town Square, today announces award-winning chef and mixologist, Carlo Cavallo, as Corporate Executive Chef. In this role, Chef Cavallo will oversee the creative development of all food and beverage menus as well as the training of kitchen staff in all Medusa Group concepts.

Chef Cavallo got his start in the culinary industry working as a pastry chef at L’Assassino, in Milan, Italy. With more than 20 years culinary experience, Cavallo has worked as Executive Chef for Giorgio Armani, Executive Chef at the Hyatt Sainte Claire Hotel in San Jose, Calif. and Corporate Executive Chef/ Director of Operations for the D’Angelo Corporation.
In 1999, Cavallo opened Meritage Martini Oyster Bar & Grille in Sonoma, Calif. This highly acclaimed eatery has been named Best Seafood Restaurant in Napa and Sonoma County for eight consecutive years. In addition to owning and operating his own restaurant, Chef Cavallo is also a culinary instructor at the award-winning Ramekins Cooking School and recently opened his own private cooking school in Napa Valley, Villetta Cavallo.
No stranger to industry accolades, Cavallo has won consecutive Best Overall Martini awards in 2009 and 2010 at Martini Madness where he showcased his mixology skills. Currently, Chef Cavallo is the winner of the 2009 Best Beef in America Chef's Challenge, organized by the National Cattlemen's Association. Chef Cavallo has appeared on many national television networks and programs including the FoodNetwork, CNN’s “On the Menu”, NBC’s “In Wine Country,” as well as PBS and ABC morning news. He has been featured on Japanese and French television programming and his recipes and restaurants have been featured in the New York Times, Los Angeles Times, Gourmet, Wine Spectator, Wine Enthusiast, La Cucina Italiana, Chef Magazine, Conde Nast, Food and Wine, San Francisco Chronicle, Press Democrat, and Marin Independent Journal among others.
